ISIGNY SAINTE – MÈRE

Located in Normandy, the Isigny Sainte-Mère French Cooperative benefits from an exceptional “terroir” which allows the production of milk of a unique quality.

The 650 milk producers of the Cooperative are gathered in this Normandy countryside in an area of 50 km around the production site, which offers a pastureland of a rare quality.

The Cooperative produces:

  • PDO Isigny Butter
  • PDO Isigny Crème Fraiche
  • Camembert
  • PDO Pont l’Evêque
  • Mimolette
  • Fromage Frais,

which are renowned worldwide for their quality and unique taste.

Cooperative’s specialist pastrymaking butter for “tourage” has been specially developed for professional users and comes in flattened form, ready to roll out in the tourage process.

Its making is more technical and complex that traditional butter, since it has to meet both technical and traditional requirements and checks. It has been specifically designed for Viennese styles of pastry.

This butter has the plasticity required for the making of perfect pastry layers. As well as being an ideal butter for tourage, Isigny Sainte-Mère’s special tourage butter brings the unique and subtle taste and smell of fresh Isigny butter…

So it’s hardly surprising that it should be the guiding light of the Competition for the Best Croissant!

Isigny Sainte-Mère’s homogenous pouring UHT cream has been designed to withstand the rigours of cooking.

It is stable and stands up to additional ingredients. It gives very light and fluffy results when it is whipped for patisserie. It has a sweet flavour, the taste is stable.These are the key words for our sterilised product, which can be stored unopened in a dry place for several months.

A direct heat treatment is used to protect the fat of the cream. By using this process, the fat is not altered. This is essential for the quality of the finished product, since the fat gives it its taste.

Since it has been totally skimmed off the best milks that cows produce in the teroir of Isigny-sur-mere, Isigny Sainte-Mère’s cream is a refined product and carries PDO status with its Protected Denomination of Origin.

Our cows live peacefully in the open air, fed almost entirely on grass: this is what we get in the taste of the milk that they supply.

All the milk is collected within 48 hours and it is processed in a traditional way, from the intake until it is made into butter, cream, cheese or skimmed milk.

The reason why it is literally out of the ordinary is that on this exceptional terroir, the cooperative has developed know-how that can be found nowhere else.

The cooperative works with some of Normandy’s finest milks.

But, over and above its terroir, both the cooperative and its members follow their hearts and work according to Normandy traditions, preserving know-how accumulated over decades and transmitting it to future generations.

There is an attachment to traditional, hands-on techniques which allies itself with a technological and regulatory monitoring to ensure that the cooperative is always at the leading edge of industrial performance and traceability.
